The Jet Chip Wasp
The room is new, but it already knows what it’s doing. Warm, friendly staff, comfortable space, great live band, and a big, majestic bar with moxy. It’s a grown addition to the city, and one I’d return to.
Order the Jet Chip Wasp—named for the big KC Chiefs play. Holladay soft red wheat bottled-in-bond brings weight, J. Rieger Kansas City whiskey adds structure, Apologue pawpaw gives it something unexpected, and the house blanco vermouth keeps it clean and dry. Balanced, quietly complex, no wasted plays.
