Kansas City had a locomotive parked at Union Station this week. Not a toy one. Big Boy No. 4014 — the largest steam locomotive ever built, four stories of rivets and sweat rolling through on its way west — spent two nights sitting right there downtown, open for anyone who wanted to walk up and gawk at something built before any of us were born. And folks did.
Friday is National Tequila Day, and I'll be at Prime Social for it — their cocktail class with Don Fulano, where you will craft and shake two of your own cocktails all hands-on.

Most people think tequila is one drink wearing a lime wedge. It's not. It's five categories, and only one of them is the shot everyone flinched through in college.
Start with the plant, not the bottle. Tequila can only legally be made from blue Weber agave, and only in five designated regions of Mexico — mostly Jalisco, where the volcanic soil does something to the agave that other dirt just can't. Then there's the aging, which is where most people's knowledge runs out. Blanco is unaged — bottled within weeks of distillation, all agave, no wood. Reposado rests two months to a year in barrels, picking up a little color and roundness. Añejo goes one to three years, closer to a sipping whiskey than a margarita base. Extra añejo pushes past three years into genuinely luxurious territory. Cristalino takes an aged tequila and filters the color back out, keeping the barrel complexity without the caramel tint.
Here's the mistake though: using añejo in a margarita. The barrel notes — vanilla, oak, caramel — get bulldozed by lime and triple sec. You're paying sipping-tequila prices for a drink built to hide sipping-tequila character. Blanco is the correct choice for anything with citrus. Save the aged stuff for a rocks glass, alone, where you can actually taste what took three years to build.
The spot that's treating this properly this week is Prime Social, running a National Tequila Day cocktail class in partnership with Don Fulano — guests get walked through the categories, then build two of their own cocktails with a mixologist standing right there to correct your pour. That's where I’ll be this week.
A simple recipe worth trying at home: 2 oz blanco, 1 oz fresh lime juice, ¾ oz agave syrup, a pinch of salt stirred right into the shaker instead of rimmed on the glass. Shake hard, strain over one big cube. No triple sec. The agave syrup already tastes like where the tequila came from — orange liqueur just squabbles with it.
Tequila's oldest trick is convincing people it's a rowdy drink. It's not. It's a patient one that got a rowdy reputation by some rando amateurs.
